How to make crystal-clear ice cubes

Making crystal-clear ice cubes is super easy, and you will be surprised about the difference. The secret is not to use regular tap water. Because one of the things, that causes the cloudiness of the ice, is dust and extra minerals in the water. Therefore, you have to use distilled water, which you can get in any grocery store. In case you are aware of any rumors, it is a myth that distilled water is dangerous for your health. You will not have any problems drinking it, you will only have problems with an intravenous drip of distilled water, but we are bartenders, not patients ;-).

If you want to get even clearer ice, then you should boil the distilled water twice before filling it into the mold. Boiling removes air bubbles from the liquid, allowing the water molecules to stick together even harder in the freezer. After boiling the first time, allow the water to cool. Then boil again. Keep the cooling water covered to prevent any dust from collecting on the surface. Make sure that you have let the water cool a bit before pouring it in the tray so that it does not melt the mold. Now cover the mold with plastic wrap to keep out particles while freezing. If you follow all the instructions, you will get crystal-clear ice cubes. For the traditional ritual, three basics are usually sufficient: an Absinthe glass, an Absinthe spoon, and ice-cold water (e.g., from a carafe). Sugar cubes are optional. Those who prepare Absinthe more frequently or serve multiple people often use a fountain or a brouilleur for particularly even dripping.

An Absinthe glass is shaped to better highlight the aroma and mixing ratio. Many classic models (e.g., Pontarlier glasses) support the typical dilution with water and ensure that the louche effect develops beautifully and controllably – something that often appears less "harmonious" in a simple tumbler.

The Absinthe spoon is placed over the glass to hold a sugar cube while water slowly drips over it. "The right one" primarily depends on the glass size and style: It is important that it rests steadily and offers enough surface area for the water to flow through evenly.

Carafe: simple, flexible, ideal for beginners Brouilleur: controlled drip directly onto the glass, very classic Fountain: perfect for quiet, even dripping and when several glasses are to be prepared one after another (or simultaneously) – often the "ritual upgrade."
