Moulin Vert, as the name suggests, is a classic green Absinthe. It is produced in France according to a traditional recipe. Naturally, no artificial additives find their way into this absinthe—no artificial flavors, essences, or colorings. Its beautiful green color comes solely from the use of coloring herbs such as hyssop and Artemisia pontica. The alcohol content is the traditional 68%. At this high concentration, the absinthe develops its full aroma, and the naturally green color is best preserved. When ice water is added, Moulin Vert turns a thick, milky white, indicating its high content of essential oils.

Overall, Moulin Vert is a robust, fresh absinthe with a slightly bitter top note (vermouth) and grassy-mineral notes of Artemisia pontica, reminiscent of a Sauvignon Blanc. The association with wine also stems from the fact that Moulin Vert uses a wine alcohol base instead of grain alcohol. This was already a characteristic of particularly high-quality absinthes in the 19th century and lends them a slightly fruity note. Furthermore, the wine alcohol base allows the absinthe to age exceptionally well. This means that Moulin Vert becomes increasingly smooth and complex in flavor with age.

We recommend preparing Moulin Vert with 2 parts cold water to 1 part absinthe and a sugar cube. The sweetness accentuates the complexity of the absinthe and brings it to perfection in terms of flavor.

Perhaps the most famous haunt of the Green Fairy was the Moulin Rouge. Famous absinthe connoisseurs like Toulouse-Lautrec, Baudelaire, Manet, and Rimbaud met here to indulge their passion. Moulin Vert uses a slightly different blend of coloring herbs, resulting in subtle, mineral-grassy notes. Furthermore, it is distilled with wine alcohol, which lends it quality and a light fruitiness (brandy notes).

With water according to the classic ritual (1 part Absinthe to 2 parts water), a sugar cube; this makes the herbal aromas more intense.

It is also strong, with lots of herbs, so not a "light Absinthe", but more balanced than the very extreme versions.
