This cask-aged Absinthe is produced on the Golan Heights in Israel. David Zibell, the owner and Master Distiller, runs the Golani Spirits distillery there. Absinthe Holy Spirits Verte is based on a French Absinthe recipe from 1855, and was the favorite drink of David Zibell's great-great-grandmother, who served it both to her husband and in her own "Estaminet" (a traditional inn in northern France). The FDC version is the barrel aged version, as FDC stands for "Fût de Chêne", French for oak cask. The cask aging gives the Absinthe spirit some additional notes, slightly smoky and woody. 

Absinthe Holy Spirit FDC Verte is made from a sugar cane and beet base and consists of 8 herbs: 5 for distillation, including anise, fennel, calamus root, Artemisia Absinthium and locally grown Artemisia Atborescens, and 3 herbs for color: Artemisia Pontica, hyssop and lemon balm. The natural color comes exclusively from plants and the cask.

 

Golan Height Distillery

Golani Distillery is a family-run distillery in the Golan Heights region of Israel. Founded in 2014 by David and Alona Zibell, the distillery focuses on producing high-quality spirits. In 2016, they launched Israel's first-ever crowd-funded whiskey - a milestone for the family and distillery. Since then, the range has been continuously expanded. In addition to locally produced Whiskies, the range includes Absinthes and Gins that reflect the unique terroir of the region.

"FdC" stands for Fut de Chêne" (French for oak barrel) refers to an Absinthe that matures in an oak barrel after distillation. This gives it its natural greenish-brown color and additional aromatic depth.
